Jenny's Gluten-Free Dairy-Free Meatballs

Ingredients:

  • 1 lb. ground grass-fed beef, chicken, or turney 

  • 1 pastured egg

  • 0.5 - 1 tbsp. caraway seeds

  • 2 cloves minced garlic

  • 1/2 tbsp. minced ginger

  • pinches of black pepper

  • 2 tsp. of red wine or any cooking wine

  • 1 copped scallion 

  • 1/4 raw onion, finely chopped

  • 1 tsp. fresh oregano

  • 1 tsp. fresh parsley 

  • 0.5 - 1 tbsp avocado oil or organic canola oil

Optional:

  • 1/4 cup buckwheat flour or gluten-free flour  

  • 1/2 medium size finely chopped red bell pepper 

Directions:

  1. Mix all ingredients together and make one and a half inch balls.

  2. Place the meatballs in a baking dish. Drizzle the oil on the top of them and bake at 350 degrees for 30 minutes. Flip half way through baking.

  3. Enjoy plain or top with your favorite sauce, or mix them in your gluten-free pasta or any other dishes.
