Super-Food Chia Parfait

There is no cooking involved! It is so easy, delicious and full of omega-3 fatty acids, fiber, protein, antioxidants that can immediately transform into energy. Soaked chia seeds is consider mucilaginous food that is wonderful for gut healing. This recipe is also one of the best options for people who are working on losing weight and suffer from insulin-resistance and diabetes.


  • Chia seeds: 2-3 tablespoons

  • Cinnamon powder: 1 teaspoon

  • Coconut milk: 1-2 cups

  • Coconut yogurt: 2 tablespoons

  • Optional:

  • cinnamon: 1/2 teaspoon

  • hemp seeds or hemp protein powder: 1 tablespoon

  • moringa powder: 1/2 tablespoon

  • Acacia fiber powder or psyllium husk: 1/2 tablespoon

  • coconut chips: 1 tablespoon, can be toasted on a flat pan if it is larger chips

  • fresh fruits: banana, berries, or any other fruits

  • soaked and dehydrated walnuts: 2 tablespoons

  • Cacao powder: 1/2 tbsp


  • Mix chia seeds in coconut milk evenly and keep it in the refrigerator overnight.

  • The following morning bring the soaked chia seeds out of the refrigerator. I recommend heat it up on the stove briefly so bring up the temperature to warm.

  • Mix in all the rest of the ingredients. Enjoy!
