I have been wanting to post this recipe for a long time. Many people love to use granolas for their breakfast and snacks. Almost all the granola products on the market contain either gluten or different types of sugar that can raise blood sugar level. After having searched for it for years, I finally gave up and decided to make my own sugar-free, gluten-free and organic granola (See the recipe below). It's super easy to make AND tastes so good! Give it a try and enjoy it!
3 cups of organic gluten-free rolled oats
1 cup of unsweetened coconut flakes
1/3 organic raw coconut or avocado oil
1 tablespoon of vanilla extract
1/2 teaspoon pink salt or sea salt
2 teaspoons cinnamon or pumpkin spice, or the combination of both
1/4 teaspoon of organic Monk Fruit as a natural sweetener (It doesn't elevate blood sugar level.)
1/2 cup of soaked and dehydrated pumpkin seeds
1/2 cups of soaked and dehydrated chopped walnuts
Optional: 1/2 cups of organic unsweetened dried cherries, cranberries or other dried berries
Preheat oven to 250 degrees.
Combine all the first 7 ingredients in a big bowl and mix well.
Place mixture on a large baking sheet lined with parchment paper.
Bake for 1 hour.
Remove granola from oven and mix in pumpkin seeds, walnuts and dried berries.
Let cool. Stir in an airtight glass bottle and container. Store it in room temperature or freezer.
