I have been wanting to post this recipe for a long time. Many people love to use granola for their breakfast and snacks. Almost all the granola products on the market contain either gluten or different types of sugar that can raise blood sugar levels. After searching for it for years, I finally gave up and decided to make my own sugar-free, gluten-free, and organic granola. It's super easy to make and tastes so good! Give it a try, and enjoy it!
Ingredients:
2 cups of organic, gluten-free rolled oats
1 cup of unsweetened coconut flakes
1/3 organic raw coconut oil or avocado oil
1 tablespoon of vanilla extract
1/2 teaspoon pink salt or sea salt
2 teaspoons cinnamon or pumpkin spice or a combination of both
1/4 teaspoon of organic Monk Fruit as a natural sweetener (It doesn't elevate blood sugar level.)
1/2 cup of organic sprouted pumpkin seeds (available at Costco store)
2 cups of soaked and dehydrated walnuts, macadamia nuts, cashews, or any other nuts of your choice
Optional: You may add the following additional items as toppings:
Freshly ground flaxseeds
Chia seeds
Hemp seeds
Any types of super green powder or berry mix powder
Directions:
Preheat oven to 250 degrees.
Combine all the first seven ingredients in a big bowl and mix well.
Place the mixture on a large baking sheet lined with parchment paper.
Bake for 1 hour until oats and coconut flakes turn light brown.
Remove the granola from the oven and mix in pumpkin seeds and nuts.
Let cool. Stir in an airtight glass bottle and container. Store it at room temperature or freezer.
